Have a look at Zbrush (http://www.pixologic.com/home.php) or Mudbox
(http://usa.autodesk.com/adsk/servlet/index?siteID=123112&id=10707763).

While they are not really designed for 3D printing applications, they
can handle extremly high polygon counts and do displacement mapping (3D
structure from 2D greyscale images).

Alternatively, you could look into ClayTools
(http://www.sensable.com/products-claytools-system.htm), which comes
with a special haptic hardware device, but is made with RP in mind.
