It is correct that Cartilage will not show up well in CT scans. Conversely
it can be shown well using MR scanning but then the bone will not show up so
it is difficult to get complete immature joints. You could try to combine
the two but this is likely to be inaccurate as it would be very difficult to
align the data sets to each other. However it could be done.
 
If you are predominantly interested in the articular surfaces then I would
recommend MR scanning. I have successfully manufactured RP models of
articular cartilage and if you are interested I will give you the exact
methods the radiographer used.
